Tuna Stuffed Pita Bread Recipe

Being a dad is fun. And the best part is I get to experiment with my own recipes at home and on my kids. Well to be precise, just my eldest one as the younger one still needs her food to me smashed and mashed and… you get the drift. I always tend to experiment with what I can find in the kitchen. Here’s an interesting recipe that I “created” for dinner over the weekend. Turned out pretty good and it hardly took me any time.

Preparation Time: 20 mins
Serves 3-4
Stuff you need:
1. 2 small cans of tuna spread
2. Finely chopped garlic (2 cloves will do just fine)
3. Finely chopped onion (1 whole onion)
4. Cucumber sliced really thin
5. Chopped tomatoes (1 or 2 tomatoes)
6. Butter
7. 3 eggs

Preparation:
Ok this is how you go about it. Pre-heat your frying pan for about a couple of minutes. Roast the chopped onions and garlic in a spoon of butter in the frying pan until golden brown. Don’t roast it for too long as they might turn black. Break the eggs and pour it into the frying pan and start stirring it until you get a scrambled eggs kind of texture. This will not take more than 5 minutes tops. After this, add in the chopped tomatoes with a pinch of salt and a bit of pepper (not too much or the kids are not going to eat this). Stir it for another couple of minutes to ensure that the salt and pepper are spread evenly. Turn off the fire and let it cool down a little.

Now, take the pita bread and put the thinly cut cucumber slices in the pocket. Next take the rest of the stuff that you had just prepared on the frying pan and stuff your pita bread further. You could add mustard or ketchup if you like. You’re done!

This is definitely a very easy to prepare, healthy and yummy dinner for your kids. Yes, you can try it too. Its delicious!
